Bread dough kneaded in wet grinder

Bread dough kneaded in wet grinder using dough attachment. This grinder is about 23 years old and came with the dough attachment and a coconut scraper. The brand is Premier for those who are curious and definitely not a promotional post.

As you can see the dough making attachment works incredibly well, no hands no mess and perfect dough. You can leave it on and do other chores in the kitchen . Within 10 minutes or as per your recipe requirement the dough is ready . Ocassional scraping can be done though not needed as everything will come to a ball in the middle.

I prepare chapati dough too . For smaller quantities I use my mixie jar to prepare small dough. Almost nothing sticks to the grinder vessel and the hook is also very clean, so easy to clean too.

This post is about the dough prepared using grinder . As almost everyone has the wet grinder, you can easily knead using grinder itself . The attachment is also sold separately online in case your machine doesn't have one . Just make sure it is compatible with your brand I don't need too many gadgets in the kitchen so I try to use whatever I have if possible. Depending on usage I decided not to go for a separate machine to knead dough.

Ingredients:

1 3/4 cup a mix of all purpose flour and whole-wheat flour

Salt

4 tbsp oil

1 tbsp butter

4 tbsp milk powder

2 tsp yeast

1/2 cup milk plus 2-3 tbsp to be added while kneading

Set this extra milk aside.

1 tbsp sugar or maple syrup or jaggery to activate yeast.

Method :

Activate yeast by adding to warm milk, add jaggery or syrup or sugar . Cover and rest for 5 minutes . If the yeast is good it will bloom within 5 minutes.

As we are preparing the dough in the grinder using the kneading attachment we will add all ingredients one by one as shown.

First add flour, little at a time, add salt, allow to run dry till dry ingredients mix well, then add the activated yeast, milk, milk powder, oil and butter, (keep some oil aside to be added in between )

Oil and butter can be added in stages .

Add remaining flour during kneading.

Add extra milk if necessary if you feel the mixture seems dry as flour quality will determine amount of liquid to be added .

Initially the dough will seem sticky but that is normal.

After 8-10 minutes the dough is formed by coming together in the centre cleaning the sides and the bottom. The dough kneaded this way us extremely good and perfect for baking breads.

Those who find hand kneading difficult or cumbersome as 12 minutes of hand kneading is tiring, can use the grinder which has the dough attachment.

If your grinder has no dough kneading attachment, you can purchase online. As the attachment is reasonably priced and available in Amazon too . Make sure it is compatible with your brand of grinder. This is so much cheaper than buying an expensive Kitchen aid machine just or makno douon. Unless vou bake, is so much cheaper than buying an expensive Kitchen aid machine just for making dough. Unless you bake regularly, my opinion is it is a waste and occupies unnecessary space . Whereas most Indian households already own the affordable wet grinder to grind batter for idli dosa Vada etc. The same can be put to use for kneading dough for chapati or bread.

Test check a ball of dough to see if gluten has formed well. Continue if dough tears.

Take out dough to a oiled bowl, cover and allow to proof till doubled . May take about 45 minutes.

After dough has doubled , take it to a counter and shake as you prefer either as a single loaf or as individual rolls. Cover and keep for second proofing till they have doubled . Give a milk wash . Sprinkle sesame seeds ( optional)

Preheat oven to 180 C. Bake in a preheated oven for about 20-25 minutes .

IMPORTANT:

Please note time will depend on your oven brand . My oven is very old and takes about 25 minutes to 30 minutes sometimes. Initially set it for 20 minutes then continue if it is not done. Most ovens give a good result at 20 minutes itself for same recipe.
