Blueberry vanilla cake ( eggless ) prepared by using my home made cake premix for saving time in measuring.

The most lightest air cake that astounded me as I didn't expect much from the premix powder.

This is a Delicious eggless blueberries vanilla cake baked with a premix prepared ahead for instant cravings !

Having a cake premix on hand in small quantities is very useful esp with kids around who demand cakes any time, so from a simple plain milk cake to many flavored cakes, such as vanilla, chocolate, butterscotch can be prepared quickly as there is no need to individually measure each ingredient and sometimes we may not have them either.

Another plus of having a cake premix is it can be used to prepare mini chip cakes, muffins, pancakes too.

To prepare cake

Take the prepared pre Mix

3 tbsp oil

First of all , 100 MI milk to be added as needed only.

Mix well. Add vanilla essence .

Furthermore prepare cake batter by adding milk little by little till the cake batter falls in ribbon like consistency.

Furthermore add approximately 1/4 cup blueberries. Mix 1 tsp flour to blueberries before adding to cake batter.

Furthermore add more berries to garnish on top . Grease a cake pan about 7 inches, with butter or ghee line with butter paper.

Lastly pour batter into the prepared pan, tap lightly to remove bubbles Bake in a pre heated oven at 180 C for 20 to 25 minutes or till done .

Ingredients: for premix

* 150 grams All purpose flour

* 75 grams Milk powder

* 75 grams sugar powder

* 1.5 tsp Baking powder

* 1/2 tsp Baking soda

* 1 tsp Vanilla powder ( optional, vanilla essence can be added to cake batter later too )

Grind all the dry ingredients together so that they blend well

Sieve the mix and store the fine premix powder.

Use as needed by adding milk and oil according to qty of cake flour taken . Add extras like essence of preferred flavour, add nuts and berries if preferred.

This is a basic cake mix that can be used in different ways

You can prepare excellent pancakes for kids too at a moments notice. The dry pre mix powder stays good upto 3 months.
