Fenugreek Seeds chutney powder


4 tbsp methi seeds/fenugreek seeds ( increase the qty of ingredients after you have tried and tested )
2 tbsp mustard seeds
4 red chillies or as per your taste.
Pinch of asafoetida powder
Pinch of mango powder /aamchur powder
salt to taste
Pinch of turmeric powder
1 tbsp. oil ( sesame oil preferably)


Some crushed kasoori methi can be added to the powder .

The oil should coat every grain so that it stores well and the bitterness  is not noticed.


Roast with oil all the ingredients except salt.Cool well and grind coarsely.
Store in a air tight container

To use

add some water for a thick chutney  or add some oil to have it with dosas, theplas and chapatis.

Uses of this powder.

1. To mix with rice and have as a methi rice.
2..To sprinkle i some curries.
3. Can be used to make pickles with mangoes or any vegetable, acts as preservative.
4. To make quick methi parathas, use this powder to mix with dough or layer a rolled roti and place another on top, press lightly, roll out again, a tasty healthy methi paratha is ready..

Medicinal value:

Fenugreek seeds are rich sources of minerals, vitamins,phytonutrients.
100 grams of seeds provide 323 calories.
The seeds contain soluble dietary fibre.
The compounds present in fenugreek help lower LDL- Cholesterol levels by i bile salts re absorption in the colon.
It helps to increase the bulk of the food and augment bowel movements,helps in easy digestion and relieve constipation.
The seeds are used in traditional medicines to make laxatives, digestive and as a remedy  for cough and bronchitis.
If used regularly fenugreek seeds help control cholesterol, triglycerides as well as high blood sugar ( glycemic ) levels in diabetics.

    We can crush the fenugreek seeds coarsely, as well as the mustard seeds. Recipe remains the same. The resultant powder can be used to make instant pickles by adding veggies and lime juice. In gujarati we call it sambharo.
