Crispy wheat rava dosa made instantly !!
Yes..the word instant does grab us !! I have lost count of the no of times i fall back on this recipe  simply because some days breakfasts just dont happen…we are family that doesnt have a great routine ..so a bowl of porridge/ kanji is good enough ..but when a breakfast of some kind of dosa is desired  in case cooking for lunch  takes time then this instant wheat rava dosa is my rescue …and it tastes super awesome when prepared, and had immediately ..while hot . Add ghee for preparation and it tastes so much like ghee roast too.
Godhumai Dosa or wheat flour crepes come in the category
of quick fix breakfast or evening snack break option. It is difficult to have
stock of batter to make regular dosa through the week and  also it gets a tad boring too to have it every single day. It is also at such times I depend on wheat flour dosas ( crepes ) to give an interesting choice which is liked by all.
Now here are simple two ways,  ( i can think of many more ways though ! ) of making this dosa instantly..one with wheat and rava added , which i really prefer as it gives a crispy dosa. the other one with rice flour and a tempering , which is also a traditional way of making godhumai dosa as it is called in Tamil …so pick your favourite .

1 cup wheat flour
1/4 cup semolina / sooji
1/4 cup rice flour
salt as needed
oil or ghee for making dosas
2 tbsp curds ( optional )
water as required to prepare dosa batter
Take a bowl
add in wheat flour and rava and rice flour
add water, salt  and prepare a dosa batter with a whisk to break up lumps .
Rest batter for 15 minutes
Heat  a dosa tava , grease and wipe well, pour dosa batter, and spread quickly like normal dosa, not like rava dosa , as the batter is like normal dosa batter , spreadable .
add in ghee for edges, flip and remove
2. Wheat flour dosa ( another variation )

The simple wheat flour which is available in every
household gets a great makeover when made into spicy dosas with  finely chopped green chillis, cumin seeds, chopped coriander and grated ginger are added to the batter.
These dosa are much softer but equally delicious


2 cups wheat flour
½ cup rice flour
Pinch of asafoetida
Salt to taste
1 tbsp finely chopped green chillis
1 tbsp chopped coriander leaves.
½ tsp cumin seeds.
Sufficient water to make the batter.


Use a whisk to blend all ingredients and the flours to
get a smooth lump free batter.
 Heat a iron or nonstick dosa tava ,  let it get heated well, then take a big ladle of the batter and make quick swirls, don’t keep spreading it slowly as lumps will form or will get disconnected.
This batter is unlike regular batter where you can afford
to make swirls slowly and try to make as thin as possible. The gluten in the
flours will get sticky on the hot pan and you will not be able to make smooth swirls. Takes a bit of practice , but you will get delicious , mildly spiced dosas.
Godhumai dosa will taste great when served hot with chutneys, sambar or Chutney powder.


You may add finely chopped onions too to the batter.
healthy dosas can be made by adding finely shredded cabbage, grated carrots, greens like spinach, drumstick leaves, methi leaves or any healthy greens .
